Craving carbs? Do you consider yourself a pasta lover?
How about a healthier alternative to using spaghetti noodles? Have you tried spiralized veggies yet? They sell them now ready to use so you don't have to do it yourself. Although... I'll admit to having a useless spiralizer collecting dust in the pantry too just in case I ever get crazy and decide to do it myself.
My favorite "noodle" for making a pasta-like dinner is zucchini, but I also love using butternut squash too. You can find them everywhere now... even Target sells them. Add it to the list of reasons Target robs me every week...
Simply saute the veggies on the stove top with a bit of olive oil. I also like to add fresh spinach while I'm at it, but you can add anything you'd normally like to eat in a pasta dish.
I usually add whatever I happen to have on hand, but in this case I added grilled chicken, garbanzo beans, spinach, riced broccoli I had in the freezer, and some leftover marinara sauce...
It's good, ladies, I promise. And you'll totally feel like you're eating spaghetti too, but without the lack of nutritious value that pasta offers.
And frankly we can all stand to have more veggies in our diets, right?
